Shrimp Aguachile with Wild Chiltepin
Authentic shrimp aguachile recipe with wild chiltepin hot sauce from Sonora. 25 minutes, 4 servings. Spicy seafood with clean citrus notes.
By Julian Orozco, founder of La Yaquiyori

Aguachile is perhaps the most natural pairing for wild chiltepin hot sauce. The acidity of lime and the freshness of shrimp balance the explosive spiciness and citrus notes of chiltepin. The result is an aguachile with the authentic flavor of Sonora - cleaner and more complex than the traditional version with green chiles.
Ingredients
- 500 g fresh shrimp, cleaned
- 2-3 tablespoons La Yaquiyori chiltepin hot sauce
- Juice of 6 fresh limes
- 1 cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- Fresh cilantro to taste
- Salt to taste
Method
1. In a medium bowl, mix the fresh lime juice with 2-3 tablespoons of La Yaquiyori chiltepin hot sauce. Adjust the spiciness to your taste.
2. Add the thinly sliced cucumber, red onion and fresh cilantro. Stir gently.
3. Add the cleaned shrimp and refrigerate for 20 minutes. The shrimp will cook in the acidity of the lime.
4. Serve cold over tostadas with more chiltepin sauce to taste and a touch of salt.
Tips
If you prefer a milder aguachile, reduce to 1 tablespoon of chiltepin sauce. For more intensity, add crushed whole chiltepin at the end. Wild chiltepin hot sauce sits between 50,000 and 100,000 SHU - start small and adjust.
