La Yaquiyori — the character of wild chiltepin, bottled with respect
We are a Sonoran project dedicated to one idea: that wild chiltepin pepper deserves to reach your table without shortcuts and without blends. This is the story behind every bottle.

The origin
La Yaquiyori was born in Sonora, Mexico, with the conviction that wild chiltepin — the "red gold" that grows naturally in the mountains of northwestern Mexico — has such a distinctive character that it needs no companions. Most commercial chiltepin sauces blend this chile with cheaper peppers, or use it as a flavor accent on a different base. We wanted to do the opposite: a sauce where chiltepin is the only protagonist.
Our single-varietal philosophy
Single-varietal means the only chile in our recipe is wild chiltepin. No árbol, no guajillo, no extracts, no colorants. This raises the cost and shortens the shelf life, but it lets every bottle express the full spectrum of chiltepin: fruity, citrus and lightly smoky notes, with a heat between 50,000 and 100,000 Scoville units that is intense but short-lived.
The Sierra and the harvesters
Each harvest begins between September and November when chiltepines ripen in the mountains of Sonora. We work directly with harvesting families who climb the Sierra to gather the fruit by hand, plant by plant. There are no machines for this harvest — there never will be — because wild chiltepin grows scattered under the shade of nurse trees like amapa, torote and mauto, on rugged terrain that requires generational local knowledge.
Small-batch production
We process chiltepin in small batches, which lets us adjust each batch's balance based on the year's harvest (chiltepin's potency varies by season and microclimate). Every 150 ml glass bottle is filled and labeled by hand. Glass matters: it is inert, doesn't react with the sauce's acidity, and preserves the original flavor better than any plastic.
