Our promise

One chile. One source. One recipe.
The wild chiltepin of Sonora, bottled with respect.

Single-varietal artisanal hot sauce with the perfect balance of heat and flavor. Built for ceviche, carne asada, oysters, and every bite that deserves character.

Why single-varietal

No blends. No fillers. No shortcuts.

01

Wild, not cultivated

The chiltepin in our bottle grows wild under the shade of native trees in Sonora. It's hand-harvested between September and November — no machinery, no plantations.

02

100% chiltepin recipe

Most "chiltepin" sauces are blends with cheaper peppers. Ours is mono-varietal: the only chile in the recipe is wild chiltepin. The flavor and heat come from one source.

03

Glass, never plastic

Glass is inert: it does not react with the sauce's acidity nor leach compounds, so it preserves the original flavor of the chile.

Common questions

Things people ask us

What is wild chiltepin?

Wild chiltepin (Capsicum annuum var. glabriusculum) is one of the oldest and most ancestral chiles in Mexico. It grows wild in the mountains of northwestern Mexico, especially Sonora, where the arid climate gives it a unique flavor and heat. It is one of the most expensive chiles in Mexican cuisine due to hand-harvesting and limited supply — hence the nickname "red gold of Sonora".

How is La Yaquiyori different from other chiltepin hot sauces?

Most "chiltepin" hot sauces use cheaper peppers (like árbol or guajillo) as the base and add chiltepin powder for branding. La Yaquiyori is single-varietal: the only chile in the recipe is wild chiltepin from Sonora. No extracts, no blends. Hand-harvested and bottled in glass.

How spicy is it?

Medium-high heat: 50,000–100,000 Scoville Heat Units (SHU). The heat is sharp but short-lived, so the fruity, citrus and lightly smoky notes come through without burning your palate.

How do I store it?

Keep it in a cool, dark place. Once opened, refrigerate to preserve the citrus notes. The natural pigments (carotenoids) are light-sensitive — color fading is a sign of authenticity, not spoilage.
