Fresh Oysters with Chiltepin and Lime
A minimalist recipe: fresh oysters with wild chiltepin hot sauce and lime. 5 minutes, 2 servings. Raw seafood with the red gold of Sonora.
By Julian Orozco, founder of La Yaquiyori

If you love fresh oysters, wild chiltepin hot sauce is the ideal companion. Its fleeting spiciness highlights the freshness of the seafood without masking it - the opposite of industrial sauces that dominate the flavor. This recipe is the purest way to enjoy the red gold of Sonora with what the sea offers.
Ingredients
- 12 fresh oysters, shucked
- La Yaquiyori chiltepin hot sauce to taste
- 1 fresh lime
- Crushed ice to serve
Method
1. Place the shucked oysters over a bed of crushed ice on a serving platter.
2. Add 2-3 drops of chiltepin hot sauce directly on each oyster. Start with a little - wild chiltepin is potent.
3. Finish with a touch of fresh lime juice on each.
4. Serve immediately. Fresh oysters lose quality fast once they leave the ice.
Tips
Make sure to buy oysters from a trusted supplier. La Yaquiyori is single-varietal, so it does not mask the flavor of the seafood - which is why oyster quality matters most.
