Gourmet Pizza with Chiltepin Hot Sauce
Gourmet pizza recipe with wild chiltepin hot sauce as base or finishing drizzle. 30 minutes, 4 servings. Chef-driven cooking with the red gold of Sonora.
By Julian Orozco, founder of La Yaquiyori

It sounds unconventional, but chiltepin hot sauce turns an ordinary pizza into a gourmet experience. The fruity and citrus notes of wild chiltepin complement melted cheese perfectly. This recipe uses the sauce as the base (instead of tomato) for a bolder, more Mexican profile.
Ingredients
- 1 stretched pizza base (homemade or store-bought)
- 3 tablespoons La Yaquiyori chiltepin hot sauce
- 200 g fresh mozzarella, sliced
- Extra virgin olive oil
- Fresh basil
- Flaky salt to taste
Method
1. Preheat the oven to 250°C (480°F) with the pizza stone or tray inside.
2. Spread the chiltepin sauce over the pizza base as a replacement for tomato sauce. Cover the whole surface leaving a 1 cm rim.
3. Top with fresh mozzarella and drizzle with extra virgin olive oil.
4. Bake 12-15 minutes until the cheese bubbles and the edges brown.
5. Finish with fresh basil, flaky salt and another drizzle of chiltepin sauce just before serving.
Tips
If you prefer to keep the tomato base, use the chiltepin sauce as a finishing drizzle only - apply it to the pizza fresh out of the oven. The intensity of chiltepin is preserved better without prolonged cooking.
