Real chile, not extract

Many commercial sauces labeled "chiltepin" actually use a base of cheaper chiles (such as árbol or guajillo) and add chiltepin extract or powder to justify the name. An authentic artisanal sauce like La Yaquiyori is single-varietal: the only chile in the recipe is wild chiltepin. The flavor, heat and aroma all come from this one ancestral chile.

Artisanal production means making the sauce in limited quantities, supervising every batch by hand. This allows us to adjust the flavor balance based on each specific harvest of chiltepin (whose potency varies year to year) — something impossible on an industrial production line where everything is standardized with additives.

Industrial sauces typically lean on stabilizers and colorants to maintain a uniform appearance and flavor for years on the shelf. An artisanal chiltepin hot sauce relies mostly on the natural balance of its ingredients: the acidity of vinegar, the capsaicin of the chile and glass bottling to preserve the freshness of the batch.

Glass matters

We bottle in glass, never plastic. Glass is inert: it does not react with the sauce's acidity nor leach compounds that alter flavor. Sauces in plastic packaging can develop unwanted flavors over time, especially with products as acidic and spicy as chiltepin sauce.

A natural color that tells a story

If you have ever noticed your chiltepin sauce shifting tone slightly over time, that is proof of authenticity. The natural pigments of chiltepin (carotenoids) are light-sensitive, and that gradual shift is the signature of a product without artificial colorants. Industrial sauces keep their color because they use additives to fix it artificially.

In the end, the best test is taste. An artisanal wild chiltepin sauce has a depth of flavor, an aromatic complexity and a clean heat that simply does not exist in industrial versions.
